Recipe: Spicy Thai Curry Meatballs
Enjoy our signature Gluten Free Turkey Meatballs in a Spicy Coconut Curry Peanut Sauce. The turkey meatballs are cooked to perfection and are served with an amazing zesty sauce. The sauce combines chili garlic, coconut milk, peanut butter, hot honey, and spices for a harmonious mix. It is an easy meal for dinner that is both healthy and delicious. Serve over rice and veggies, and enjoy this mouthwatering meal.
Meatballs Ingredients:

1 lb Ground Turkey

1/3 cup Almond Flour

1 egg

½ cup Green Onion, Chopped

Season with: salt, pepper, onion powder, garlic powder, curry powder, red pepper flakes
Prepare Meatballs:
- Mix all ingredients for the meatballs in a bowl
- Roll into meatball size balls
- Put in the oven at 425 for 20-25 mins (depending on meatball size and oven)
Sauce Ingredients:
- 2 tbsp Chili Garlic Sauce
- 1 tsp Ginger (fresh or powder)
- 1 tsp Garlic powder
- 1 full can of Coconut Milk
- 2 tbsp Crunchy Peanut Butter
- 1.5 tbsp Mike's Hot Honey
- 1 tbsp Red Curry Paste
- 1 tbsp Coconut Aminos
- Half of a Lemon
Prepare Sauce:
- Put a pot on the stove and heat on medium
- Add 2 tbsp of chili garlic sauce
- Put garlic powder and ginger powder on top and heat up for 1-2mins
- Add the full can of coconut milk
- Bring that to a boil
- Add in 2 tbsp of the crunchy peanut butter
- Mix in the Mike's hot honey, red curry paste, and coconut aminos
- Then squeeze in the juice of half of lemon
- Simmer and let the sauce thicken
- Remove the sauce from the heat and add the meatballs to coat thoroughly.
Serve the turkey meatballs on a bed of your favorite rice with a side of your preferred vegetables. Enjoy the perfect blend of savory and spicy flavors.
