Turmeric Butternut Squash Soup

Ingredients:

  • 1 fennel bulb 
  • 6 Big carrots
  • 1 Butternut Squash
  • 3 Cloves of Garlic
  • Turmeric (fresh or powder)
  • 3 Cups of Bone Broth
  • 1 Can Coconut Milk
  • Seasoning: Salt and Pepper

Instructions:

  1. Dice fennel bulb, peel and chop carrots, peel and cube butternut squash
  2. Heat Olive oil in a pot 
  3. Add in fennel, carrots, and butternut squash 
  4. Sauté for 5 mins in pot
  5. Add fresh garlic and turmeric. Season with salt and pepper. Sauté for 5 more minutes. 
  6. Add in 3 cups bone broth and 1 can coconut milk
  7. Boil and simmer for 20 mins
  8. Finally, transfer from the pot into a blender and then blend it up for your soup
