Recipe: Healthy Cashew Chocolate Cookies (GF + Vegan)

Ingredients:
- 1/2 cup coconut sugar
- 3 tbsp tapioca flour
- 1/3 cup gluten free flour
- 1 tsp baking soda
- Salt to taste
- 1 cup cashew butter
- 1 tbsp vanilla
- 3/4 cup maple syrup
- Chocolate chips of choice (I like HU or Enjoy Life)
Instructions:
- Mix everything in a bowl
- Roll into balls based on size of cookie you want (is slightly sticky)
- Bake 11-13mins at 350
