Recipe: Creamy Zucchini Potato Soup

This creamy zucchini and potato soup is a comforting blend of tender zucchini and hearty potatoes, simmered to perfection in a velvety, creamy broth. This hearty and creamy zucchini and potato soup is the ideal comfort food to warm you up on a chilly day, providing both nourishment and a cozy feeling with every spoonful.

 

Ingredients:

  • 2 Zucchini
  • 6 Yellow Round Potatoes
  • 2 Cloves Garlic
  • Half a Yellow Onion
  • 4 Cups Bone Broth
  • ½ cup of Cashew Milk
  • Parmesan Cheese (optional)
  • Seasoning: Salt, Pepper, Thyme, Rosemary, Bay Leaves, Rosemary, Oregano 

Instructions:

  1. Heat Olive Oil in a large pot
  2. Add in chopped Onion and Garlic and cook until fragrant 
  3. Cut up zucchini in cubes 
  4. Peel and cut Potatoes into cubes 
  5. Add both zucchini and potatoes into the pot cook for 5mins
  6. Add in 4 cups of bone broth
  7. Add seasoning thyme, oregano, paprika, salt and pepper
  8. Boil and simmer for 20-30 mins until potatoes are soft
  9. Pour full mix into a blender to fully blend it out
  10. Pour it back into the pot on medium/low heat and add 1/2 cup cashew milk (or your milk of choice) and add in parm cheese as optional cook for 5-7 mins
