Recipe: Coconut Turmeric Rice

Coconut Turmeric Rice:

I love adding white rice to many of my dishes and this coconut curry rice recipe adds so much flavor and flare to the meal.


Ingredients:

  • 1 cup White rice 
  • Ginger minced 
  • Garlic minced 
  • Can of coconut milk 
  • Spices Turmeric, cumin, red pepper flakes, paprika, salt, and pepper

Process:

  1. Wash your White / Jasmine rice
  2. Take your ginger and garlic and mince it
  3. Add olive oil to the pot and cook until fragrant  
  4. Add your rinsed rice into the pot with the full can of coconut milk 
  5. Add spices turmeric, cumin, red pepper flakes, paprika, salt, and pepper in 
  6. Boil and then cover for 20 mins

Other nutritious ways to cook your rice:

  • Add coconut oil or MCT oil to the water
  • Use bone broth instead of water

Tips for what to do with your leftover rice:

  • Make sure you are not putting hot food in plastic containers - put it in glass instead
  • If using glass do not put a plastic top over the hot food, you need it to cool down first
  • Do not let your rice sit on the counter longer than 30mins to cool down because bacteria can form 
  • What I like to do is place the rice in a glass storage container, put a large stainless steel or metal spoon in it and put it in the fridge uncovered to cool down (typically cooled to where it needs in 2 hours), then put cover on and store in the fridge
