Recipe: Coconut Turmeric Rice
Coconut Turmeric Rice:
I love adding white rice to many of my dishes and this coconut curry rice recipe adds so much flavor and flare to the meal.
Ingredients:
- 1 cup White rice
- Ginger minced
- Garlic minced
- Can of coconut milk
- Spices Turmeric, cumin, red pepper flakes, paprika, salt, and pepper
Process:
- Wash your White / Jasmine rice
- Take your ginger and garlic and mince it
- Add olive oil to the pot and cook until fragrant
- Add your rinsed rice into the pot with the full can of coconut milk
- Add spices turmeric, cumin, red pepper flakes, paprika, salt, and pepper in
- Boil and then cover for 20 mins
Other nutritious ways to cook your rice:
- Add coconut oil or MCT oil to the water
- Use bone broth instead of water
Tips for what to do with your leftover rice:
- Make sure you are not putting hot food in plastic containers - put it in glass instead
- If using glass do not put a plastic top over the hot food, you need it to cool down first
- Do not let your rice sit on the counter longer than 30mins to cool down because bacteria can form
- What I like to do is place the rice in a glass storage container, put a large stainless steel or metal spoon in it and put it in the fridge uncovered to cool down (typically cooled to where it needs in 2 hours), then put cover on and store in the fridge
