Recipe: Blueberry Protein Pancakes
These Blueberry Protein Pancakes are incredibly tasty and are high in protein. They're made by combining ingredients like flour, protein powder, eggs, greek yogurt and blueberries to create a fluffy and satisfying stack of pancakes. Ingredients:
- 2 eggs
- 1 cup gluten free flour
- 1 scoop of protein powder
- 2 tbsp baking powder
- 1 tsp vanilla extract
- 2/3 cups almond milk (or milk of choice)
- Ceylon Cinnamon
- 1/3 cup of greek Yogurt (or Kefir)
- Handful of Blueberries
Instructions:
- Get your pan nice and hot
- Mix all wet and dry ingredients into a bowl and mix together
- Before each pancake add butter or olive oil to the pan
- Scoop pancake size batter onto the pan until it browns on that side and the flip
