Carrot Walnut Loaf
This Gluten Free Carrot Walnut Loaf is the perfect healthy treat to kick off fall. It's extremely moist and even more delicious than it looks.
Its dense, yet incredibly soft texture is infused with the warm notes of brown sugar, cinnamon, and nutmeg. Whether you prefer it plain or with walnuts as made you can make it even more fun by adding in raisins, pecans, or adding a cinnamon cream cheese frosting. This loaf will soon be a kitchen favorite.
Ingredients:
- 3 eggs
- 2 cups Almond Flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 cup ground flax seed (can put reg in a nutribullet to make it ground)
- 1/3 cup coconut sugar
- 1 tsp Ceylon cinnamon
- 1 tsp nutmeg
- 1 tsp vanilla
- 1/3 cup maple syrup
- 1/2 cup coconut oil (melted)
- 2-3 large carrots finely chopped
- 1/3 cup of walnuts finely chopped
- 1 big Tbsp of Greek yogurt
- Dash of Salt to taste
Instructions:
- Finely chop your carrots and walnuts and add to a bowl together
- Get all of your dry ingredients and add to a separate bowl. Almond flour, baking powder, baking soda, ground flaxseed, coconut sugar, cinnamon, nutmeg, salt
- Then add all wet ingredients to a separate bowl. Eggs, melted coconut oil, vanilla, Maple syrup, and Greek yogurt
- Mix the dry mixture into the wet mixture, and mix it all together.
- Add in your carrots and walnuts
- Put into Loaf pan
- Bake for 50-60 mins at 350
